Japan's Sake industry is suffering. In an effort to revive a centuries old tradition and to ensure that knowledge and culture isn't lost; we've specially curate bespoke Sake collections from regional Japan, hidden in it's picturesque misty mountains and the quiet tranquil valleys; Where time slows down, and the air is somehow crisper, fresher. Here, sake is still made the way it has been for centuries. By hand, with reverence, patience, and mastercraftsmanship that's been handed down from master to apprentice since the Yayoi Dynasty (300 BCE – 300 CE) and methods improving through the 15th–16th century with a multi parallel fermentation method (converting starch to sugar and sugar to alcohol simultaneously), which is still used today.
